Taşpınar Carpet
The threads used in Taşpınar Carpet are prepared by hand-spinning the wool of sheep grown in the region and they are dyed with madder obtained from plants collected from Hasandağı. Main colors are dark red and dark blue. The carpets woven in carpet looms called Istar are decorated with motifs placed in geometrical order.
Aksaray Tulum Kebab
Tulum Kebab is a dish prepared by the shepherds in the past, whose story has survived until today. Before shepherds set out to graze the herds, they dug a well, cut the lamb they slaughtered, skinned the animal and aged the meat, then rub the lamb meat with the spices they brought along them, put them in the lambskin and sew the mouth. Cooked by firing up in the well, Aksaray Tulum Kebab was ready for the return of the shepherds. Tulum Kebab is still cooked in Aksaray, sticking to the traditional methods.
İnceelek Dessert
İnceelek Dessert took its name from the very thin rolling of the phyllo. It is prepared with phyllo bread, also called winter bread, in the region. The dough is thinned with a roller and cooked on the sheet. The phyllos are moistened with water, stacked on a baking tray, and walnuts are sprinkled among the phyllos. After pouring the butter onto it, the tray is put into the oven. After it is baked in the oven, it is served by pouring cold sorbet on it. It is offered in the region especially during Ramadan and on eids.
Eşmekaya Yogurt
The most important feature of Eşmekaya yogurt is that it is obtained from the milk of sheep eating various endemic plants grown in the plateaus of Eşmekaya town. It is completely natural. It can be produced from March to December, by working 12 hours a day. For the taste and naturality of yogurt, after milking from the sheep, milk is boiled in wood fire in copper or aluminum boilers set in the garden by traditional methods.
Sultanhanı Rug
The most important feature of Sultanhanı Rug is the depiction of Sultanhanı Caravansary in its ornament, which is the largest Seljuk caravansary in Anatolia. The production of Sultanhanı Rug, which is woven as a dowery in traditional life and produced from buff and sheep wool, is still carried out in Sultanhanı district.
